Prepare all your ingredients as shown in this picture

Add all the vegetables to a pan and sweat for a few mins

Add shop brought spice paste and cook it out for 5mins on med heat

And coconut milk and simmer for 15mins on med until all vegetables are tender

Add coriander at the end to fresh it up

It's great on its own as a vegetarian stew or add your favourite fish like I have
