Ingredients

  1. Salad
  2. 1/2 stalkof washed lettuce of your choice - some types include red mini cos, romaine, iceberg
  3. 1A large handful of washed and fresh kale
  4. 20-30 leaves of washed baby spinach
  5. 1fresh small tomato
  6. 2fresh carrots
  7. 1/4red onion
  8. 1A handful of fresh parsley
  9. 1A handful of fresh coriander
  10. 1A handful of mint
  11. Dressing sauce
  12. 1tablepoon of extra virgin olive oil (any salad oil will do)
  13. 1 tbspof balsamic vinegar
  14. 1/2of either a lemon or a lime
  15. 1Sprinkle of sunflower seeds
  16. 1Generous sprinkle of flax seeds -also called linseeds
  17. 1Sprinkle of pine nuts

Cooking Instructions

    Wash the mint, parsley and coriander. Dry by placing them on a tea towel and leaving them for a few minutes. In this time, chop up the onion into fine pieces and place straight into a large salad bowl. Next, wash, peel and grate the carrots, and then place them also into the bowl.

    Wash the tomato, and then slice it into half lengthways, then half it again. You could also cut the tomato in slices if you prefer. Throw these into.the salad.

    Once the herbs are dry, cut them into.smaller pieces and sprinkle them over the vegetables in the bowl. Then slice the lettuce, spinach and kale into slightly smaller pieces, however make sure not to make them too small. Put these inside the bowl. This is your main salad completed. Now for the dressing!

    For the salad dressing simply take some olive oil or other salad oil (I personally would recommend walnut or avocado oil) and mix it with the lemon and balsamic vinegar - mustard is also optional, however I would not advise it. Drizzle this sauce over the salad and take two salad spoons to mix the salad.

    Finally, sprinkle your homemade healthy salad with the nuts and seeds, and hey presto! You have yourself a sophisticated salad! :D
