Gluten Free Fried Pickles w/ Sriracha Dip

Cooking Instructions

Drain pickle chips on paper towel and leave to soak in buttermilk for 20 minutes, at least. (I used homemade buttermilk and refrigerated it.)

Place a 2-inch deep pan on stovetop at medium-high heat while you prepare the battered pickle chips.

Combine the dry ingredients in a shallow bowl, making sure to mix thoroughly. Add additional seasonings here as you prefer.

Combine the egg and milk in a seperate dish, whisking until combined.

Now, remove pickles one at a time, dipping in the egg and coating in the dry mixture on both sides before gently slipping the pickle into the hot (not popping) oil.

Allow pickles to fry until floating and slightly golden. Flip as you will, but keep in mind that Gluten Free flour does not brown as well as regular flour.

Remove pickles to paper-towel lined plate to drain.

Combine equal parts Sriracha, Ketchup, and Mayo to taste and use as a dip for your crunchy fried pickles.

This sandwich represents the famous deli's of New York City which are often featured on the tv food shows....the pastrami I used is from the famous Katz's Deli...in NY Village...they hand cut the meat & in my opinion it the best pastrami anywhere....my sandwich is unique because i use a potato kinish as a substitue for the bread..giving it a totaly different texture & tast...you cannot purchase this sandwich in the deli's....served along with fried pickle spears ..made to look like french fries that are to be dipped in a spicy ranch dip.......Pastrami..Kinishes & Pickles are staple ingredients in the NY Deli & this dish represents some of New Yorks unique foods!!! Most people I know of in the south make this recipe by soaking the pickles in buttermilk before dredging. That method takes out the bite of the dill pickles and makes them not so sour. So if youre not real fond of pickles but want to try this recipe, that would be the way to go.I used a homeade beer batter that flufs up a bit when you cook them and tastes really light and airy for being fried.
