  • 1 eachPoblano pepper. Roasted, peeled, seeded chopped
  • 1 ozTasso ham, diced
  • 2 ozDry white wine
  • 1 cloveGarlic, minced
  • 1 tbspShallot, minced

Steps

  1. 1

    In skillet while steak rests cook shallot, pepper, garlic until garlic starts to sizzle but not brown.

  2. 2

    Deglaze pan with wine, cook until pan is almost dry

  3. 3

    Add cream and stir till cream thickens
