Ingredients

  1. 1dill pickles (I only use the always refrigerated Claussen dill pickles, the halves are best)
  2. 1 1/3 cupall-purpose flour
  3. 2 tspseason salt (more or less to taste)
  4. 3/4 tspcayenne pepper (more, less, or omit to taste)
  5. 1 tspbaking powder
  6. 1 cupbeer of choice
  7. 2 largeeggs
  8. 2 tbspvegetable oil
  9. vegetable oil for frying

    Drain the juice from the pickles. Slice pickles to desired thickness. I slice mine about 1/4 of an inch. Dry slices as much as possible with a paper towel.

    Preheat oil (at least an inch deep) to 375˚ (I use an electric skillet). While oil is heating, prepare batter.

  3. 3

    Combine flour, season salt, cayenne pepper, and baking powder in a pie pan or other shallow dish.

  4. 4

    Whisk together the beer, eggs, and oil in another pie plate or shallow dish.

  5. 5

    When oil has reached 375˚, begin soaking many pickle slices into liquid mixture.

  6. 6

    After soaking pickles in beer mixture, dredge slices in flour mixture.

  7. 7

    Carefully drop pickle slices into hot oil. Fry until golden brown. Remove from grease and set on paper towels on a plate.

  8. 8

    Serve hot with your favorite dipping sauce. I don't use any. They're that good!

In the last 4 years, I have become what I believe is a hobby chef. I absolutely love food and cooking! Everyone in my family (except my son (and even him sometimes) loves the things I make (at least most of the things). To be honest, most of the food I make are other people's recipes that I have tweaked a little bit to fit my family's likings. Although I am a disabled stay at home mom of 1 nine year old 3rd grade boy, I stay very busy and always moving. Sometimes (ok most of the time) my cooking leaves quite a mess. I like to create a new recipe with multiple other recipes. My favorite one would have to be my raspberry Margarita chicken salad. I love margaritas, especially the frozen raspberry Margarita from Chili's. I thought a Margarita marinated chicken salad would taste great with a homemade raspberry vinaigrette and I was right! I plan on posting the recipe with the sites I got the recipes from soon. I really look forward to finding and posting great recipes and getting to know everyone. Happy cooking!
