Heat oil in skillet over medium heat.

Combine Panko and Parmesan

Slice zucchini 1/4 inch rounds. Dredge in flour, dip in eggs, dredge in Panko mixture, pressing to coat.

Add zucchini to skillet. Cook til evenly golden. About 1 min. on each side.

Transfer to paper towel-lined plate. Serve immediately.
