I was trying to find a potato soup recipe and found two that I liked. I decided to combine the two recipes as well as omit a couple of ingredients. It was delicious!

Ingredients

2 1/4 cupchicken stock
1 1/4 cupwater
1 eachchicken bouillon cube
1 smallonion, chopped
2 stickcelery
5 eachwhite potatoes
1 tbspparsley
3 pinchfresh thyme
1 tspsalt
1 tsppepper
2 dashpaprika
1 stickbutter
1 pintsheavy whipping cream

Steps

Combine all ingredients except for the butter and heavy cream in a crockpot; turn the crockpot on low for 5-6 hours.

About one hour before soup is cooked, melt the butter in a medium skillet on medium low. Add the cream and constantly stir until it's a sauce. Add to soup. Let soup simmer for about 1/2 hour.
