
Cheese and onion cornbread
This is my variation on a classic.
Cooking Instructions

Pre heat oven to 200C/400°F

In a bowl mix all the ingredients together until you get a sponge cake like mixture

Grease the baking tin with the teaspoon of butter.

Scrape out as much as possible into the tin.

Put the tin on a baking tray in the top centre of the oven and bake for 20 mins.

The cornbread is ready when it is golden colour and is springy to the touch. Push a cocktail stick into it and if it comes out clean then the cornbread is ready.

Allow to cool, then enjoy!😆

This is a nice twist on classic cornbread. The cottage cheese makes it wonderfully moist. Plus, you get the benefit of the broccoli. There’s plenty of room for customization. For example, you can use a different cheese if you don’t like cheddar. While I prefer the convenience of frozen broccoli, you can always use freshly steamed broccoli.
