Cheesy Cornbread Casserole

My coworker gave me this recipe from a past potluck, and now I bake this for every holiday get together. Everybody always wants this recipe because it's extremely delicious. It's also very easy, but you'd think it took more time preparing... Make this recipe your own by
adding a touch of your faves like onions or bacon!!

adding a touch of your faves like onions or bacon!!
Cooking Instructions

Preheat oven to 375°F
- 2
Slice green peppers
- 3
Heat butter in pan until melted
- 4
Add green peppers in butter and let them simmer on medium heat until soft.

Pour jiffy boxes into a mixing bowl
- 6
Pour cream corn into the jiffy mix
- 7
Strain out excess water from the plain corn, then pour corn into jiffy mix.

Mix ingredients until it's creamy

Add melted butter and green peppers into bowl and mix evenly

Empty bowl into 13x9 baking pan (I prefer the glass casserole baking pans)

Once flat in pan, evenly add sour cream to the top of the mixture, (as if your putting frosting on a cake).

Spread cheese on top of sour cream ( I use the whole bag)

Bake for 40 minutes

There was this Italian Restaurant in Lower Manhattan that made great Polenta over Sausage and Peppers. I love polenta, but you have to stir it a lot to make. I decided to try a short cut and came up with this idea. Not as creamy as that old restaurant, but still very good. Another crowd favorite in my large and picky family.Basically, this can be made with any meat and vegetable combination. In the future, I plan on making it over Chicken & Broccoli. So far, I have made it over Chicken & Peppers and Sausage & Peppers(Twice). For the picture, I made it over Sausage &Peppers.I hope that you enjoy it as much as I did. #CA2025 I found the recipe while cruising thru FB. Oven bake or use crockpot. Crockpot recipes are great when it is too hot or inconvenient to use the oven. The recipe called for Little smokies cocktail sausages but I found it to make a more substantial meal with a ring of smoked sausage. NOTE: When the crockpot is finished remove lid and allow to sit for 15-30 minutes to firm up or you will have cornbread slop. cindybear -
