Ingredients

1 hour
6 servings
  1. meat balls
  2. 1 lbshrimp (shell, devein and finely chop)
  3. 1 lbground pork
  4. 2eggs, beaten
  5. 1 tspblack pepper and salt
  6. 3scallion (finely chop)
  7. 1 tbspred boat fish sauce
  8. 1 canfresh crab meat (prefer lump)
  9. soup
  10. 2lemon grass, discard green part. Use white part and cut into 3 inch stalks and bruise
  11. 2 tbsptomato paste
  12. 4tomatoes, quartered
  13. 2 canchicken stock (low sodium)
  14. 1 cupdried shrimp broth (made by boiling and seeping dried shrimp for 10 min) this is optional as it provides a very intense flavor
  15. 4 cupwater
  16. 10 piecefried tofu
  17. 3Shallots chopped finely
  18. 5garlic cloves finely chopped
  19. 1 tbspfish sauce
  20. 2 tbspavocado oil
  21. 2bay leaf
  22. bowl
  23. 1 packagesRice noodles boil until tender and drain
  24. 1 cupbean sprout
  25. 1 bunchbasil
  26. 1 cupchopped cabbage
  27. 1 bunchcilantro
  28. 1Lime cut into quarters

    Combine all ingredients for the meat ball and set aside.

    In a stock pot sautee Shallot and chopped garlic until aromatic.

    Add tomatoes and lemon grass and sautee until tomatoes are soft. add tomato paste and then bay leaf.

    Pour in chicken stock, fish sauce, shrimp broth, water and bring to a boil for 10 min. Skim off foam from top

    With two spoons, form small meatballs with crab-shrimp-pork mixture and place into boiling soup

    Add fried tofu, let boil until meatballs and tofu float to the top

    Cook rice noodles until tender. Drain water. Place rice noodles in a bowl, arrange meatballs and tofu and garnish with basil, bean sprout, cabbage and cilantro. Squeeze 1 wedge of lime into bowl. Pour in hot soup last.
