Peel the onions. Cut them in half lengthwise and remove the inner part if desired, to make them easier to digest and to avoid an overly strong flavor.

Thinly slice the onions and place them in a large pot with the butter and a pinch of salt. Cover and cook over very low heat, stirring occasionally, for about 20 minutes until softened but not browned.

Add a splash of rum or cognac to deglaze the pot.

Add the broth and continue to cook over low heat for about 30 minutes. The onions should become almost transparent and melt in your mouth, but not completely disappear. Adjust salt to taste.

Toast the bread slices on both sides in the oven at 400°F (200°C) until well browned so they don't get too soggy. To serve, ladle the soup with onions into bowls, add a slice of toasted bread on top, moisten the bread slightly with more broth, then generously sprinkle with grated Gruyère and black pepper. Bake until a light crust forms on top.
