In a large pot or crockpot combine chicken and BBQ sauce. If 1½ cups of the sauce does not completely cover the chicken, add more until it does.

Set over low heat (1), cover, and let simmer for about 3 hours. Check chicken periodically and adjust heat if necessary. The sauce should simmer, not boil.

Once chicken is cooked through, use 2 forks to pull chicken apart. This process can take a little while, but the more you pull the better the results.

Serve over quinoa or rice. Add vegetable sides such as corn, green beans, asparagus or green salad.
