Ingredients

  1. 4 1/2 lbszucchini (about 2 kg)
  2. 3green bell peppers
  3. 2 cupsEgyptian rice (about 400 grams)
  4. 3 1/2 ozfinely ground beef with a little fat (about 100 grams)
  5. 6garlic cloves
  6. 1 teaspoonblack pepper
  7. 1 teaspoonground cinnamon
  8. 2 teaspoonscitric acid (or substitute with 2 teaspoons lemon juice)
  9. 1 tablespoondried mint
  10. 1 tablespoontomato paste (for the rice)
  11. 2 tablespoonstomato paste (for the sauce)

Steps

  1. 1

    Wash the zucchini and hollow them out. Wash the bell peppers and remove the stems.

  2. 2

    Soak the rice, then rinse it.

  3. 3

    Add the ground beef, cinnamon, black pepper, a pinch of salt, and 1 tablespoon tomato paste to the soaked rice. Mix well.

  4. 4

    Stuff the zucchini and bell peppers with the rice mixture and arrange them in a pot.

  5. 5

    Crush the garlic and add it to the pot along with the dried mint, citric acid (or lemon juice), tomato paste, salt, and water.

  6. 6

    Once the mixture comes to a boil, reduce the heat and simmer until the vegetables are cooked through.
