Steps

In a skillet melt 2 tablespoons butter. Add hashbrowns, cook stirring frequently until browned.

Add salt and pepper, line a greased pie pan with the hashbrowns.

In a skillet melt 1 tablespoon of butter, cook chopped onions, mushrooms and peppers until tender. Stir in flour and ham.

Beat eggs and milk together. Add to ham mixture and pour over potatoes.

Bake at 350º for 20 minutes.

Remove and sprinkle grated cheese on top. Bake an additional 10 minutes or until omlet is set and cheese is melted.
