Nonno's zucchini bread

Ingredients

  1. 2 loafpans
  2. 3eggs
  3. 1 cupoil
  4. 2 1/2- 3 cups sugar
  5. 3 cupgrated zucchini
  6. 2 tspvanilla
  7. 3 cupflour
  8. 1/4 tspbaking powder
  9. 1 tspbaking soda
  10. 1 tspsalt
  11. 3 tspcinnamon

Cooking Instructions

    Preheat oven to 350. Grease and flour pans.

    With mixer on low speed beat eggs till light and fluffy. Add oil, sugar, zucchini and vanilla. Mix well.

    In large bowl mix/sift dry ingredients together.

  4. 4

    Slowly add egg mixture to dry ingredients, stirring slowly and gently until all ingredient are mixed together well.

  5. 5

    Pour batter into prepared pans and bake approximately 45 minutes to an hour or until toothpick test comes out clean.

    Cool on wire rack. When cooled remove from pan.

Make sure to squeeze all excess liquid from zuchini before mixing in. This is the best recipe out there!
