Ingredients

  1. 1 tbspolive oil
  2. 4chicken breast fillets, sliced
  3. 3garlic cloves, finely chopped
  4. 1long red chilli, deseeded, chopped
  5. 400 gramspenne
  6. 100 gramskalamata olives, chopped
  7. 2 tbspcapers, rinsed, drained
  8. 2 tbspchopped basil leaves, plus extra to serve

    Heat the olive oil in a large frypan over medium heat. Add the chicken and cook, stirring, for 5 minutes until golden, then add the garlic and chilli and cook for a further 3 minutes until chicken is cooked through and garlic is sof

  2. 2

    Meanwhile, cook the pasta in a saucepan of boiling salted water according to the packet instructions. Drain, reserving 1/3 cup (80ml) cooking water. Return the pasta to the pan.

    Add the chicken to the pasta with the olives, capers, basil and reserved cooking water and toss to combine.

    Divide the pasta among bowls and serve garnished with extra basil.
