Ingredients

  1. 2 lbHot Italian sausage links
  2. 1 lbGround hot Italian sausage
  3. 2 tbspOlive oil
  4. 2 mediumYellow onions, chopped
  5. 2 cloveGarlic, minced
  6. 1 canCrushed tomatoes (28 oz)
  7. 1 boxBeef broth (32 oz)
  8. 1 1/2 cupRed wine (optional)
  9. 1 tspDried basil
  10. 3 tbspChopped parsley
  11. 1Green pepper, chopped
  12. 2Zucchinis, sliced
  13. 1Jalapeño pepper, finely chopped
  14. 1 boxBow tie pasta
  15. 1as needed Grated Parmesan cheese

Steps

  1. 1

    Slice sausage links into 1/2 inch pieces. In skillet, brown both ground Italian sausage and sliced sausage links in batches. Drain off fat and add to a large pot.

    Heat oil in skillet and add onions, garlic, and green peppers. Sauté until onions are translucent, and add to the pot.

  3. 3

    Add the crushed tomatoes, beef broth, wine, basil ad parsley. Mix well and bring to a low boil and simmer uncovered for 30 min.

  4. 4

    Add zucchini, pasta, and jalapeño. Cover and simmer 15 min stirring occasionally. Serve with Parmesan cheese.
