Ingredients

  • 2 packagesBaby carrots, cut in half
  • 4 largeBaking potatoes, peeled and cut into pieces
  • 4 lbBoneless chuck roast or beef sirloin, cubed
  • 2 canCream of potato soup
  • 2 canChicken broth
  • 4 packagesBeefy onion soup mix
  • 1 smallYellow onion, chopped

Steps

  1. 1

    Place beef, carrots, onion, and potatoes in slow cooker (mixed).

  2. 2

    In a bowl, whisk together the cream of potato soup, broth, and soup mix. Pour over beef and vegetables in slow cooker.

  3. 3

    Cover slow cooker and cook 4 hours on high setting or 8 hours on low setting.
