mix all sauce ingredients up until it is nice and incorporated. Use a whisk to speed up the process and add the mixture to the cabbage and carrot mixture. Let the coleslaw marinate overnight in the fridge and then you are all set

Start with a medium cabbage, removing the outer leaves and the core before chopping it up into thin slices. This is much easier with a food processor, so keep that in mind if you have one sitting around. Just pulse it a few times, because you are trying to make cabbage slices, not cabbage puree.

Repeat the process with some carrots, making sure it maintains the same constancy.
