Ingredients

20 minutes
2 generous servings
  1. 1red onion
  2. 4pre-grilled red capsicum from jar
  3. 4 sprigsrosemary
  4. 4pork sausages or 2 pork and 2 veg/vegan
  5. 1 tbspfennel seeds
  6. 1 clovegarlic
  7. 200 gramsfusili pasta
  8. 1/2 jarpasata
  9. 2 tbspbalsamic vinegar
  10. optional salad
  11. Lettuce, rocket, cress
  12. 3 tblsfat-free yoghurt, 2 teaspoons English mustard, 1 lemon juice, pinch s&p, mix. chives to stir in

Steps

20 minutes
  1. 1

    Chop sausages in to 2cm pieces, gently fry in pan

  2. 2

    Put red onion, red capsicum and half rosemary in blender w fennel seeds, s&p whizz up.

  3. 3

    Add pasta to boiling water and cook to packet instructions. Turn sausages, add remaining Rosemary to oil in pan w sausages

  4. 4

    Add garlic to sausages then blended sauce - high heat 2 mins

  5. 5

    Add pasata to sauce and sausages and bring to boil. add balsamic vinegar

  6. 6

    Drain pasta, but retain and add half mug of water to sauce, add pasta and mix. Plate up and sprinkle w chives

I'm vegetarian & allergic to eggs, but my wife eats meat. I prepare all meals, often converting meat recipes in to vegetarian ones. Many of my recipes show measurements for both meat and vegetarian versions, often for the same meal... simply cooking a common sauce in one pan then using seperate pans for meat and veg to combine with sauce when served
