First baingan ko gas pe achhe se roast kijiye. Achhe se roast hone ke baad ek usko pani me clean karke finely chop kijiye.

Then ek pan me oil garam karke usme cumin seeds, chopped green chilli dal ke kuchh time fry karein.

Then usme chopped onion add karein. Thoda brown hone tak cook karein.

Uske baad haldi and red chilli powder add karke 2 min tak cook karein. Then chopped tomatoes add karke 2-3 min tak cook karein.

Fir coriander powder, jeera powder, chat Masala aur salt add karke achhe se mix karna hai.

Masale 2-3 min tak cook hone ke baad usme roasted baingan add karke achhe mix kijiye.

Thodi thodi time interval baad aise hi mix karte 3-4 min tak cook karein.

Finally thoda coriander leave add karke garma garam baingan varta serve karein.
