  • 2 cupFlour
  • 1/2 cupSugar
  • 1 tspBaking powder
  • 1/2 tspsalt
  • 1/8 tspnutmeg
  • 1/4 cupButter
  • 1 1/4 cupLow fat buttermilk
  • 1 tbspGrated lemon rind
  • 2 largeEggs lightly beaten
  • 2 cupBlueberries
  • 1Cooking spray
  • 2 tbspFresh lemon juice
  • 1 cupPowdered sugar

    Preheat oven to 400

  2. 2

    Combine flour and next 5 ingredients in a medium bowl. Cut in butter with the pastry blender or 2 knives until mixture resembles coarse meal.

  3. 3

    Combine butter milk rind and eggs stir well with a whisk. Add to flour mixture stir until moistened. Gently fold in blueberries

  4. 4

    Spoon batter into 12 muffin cups coated with cooking spray. Bake at 400 for 20 minutes or until muffins spring back when lightly touched. Remove muffins from pans immediately and place on the wire wrack to cool.

  5. 5

    Combine lemon juice and powdered sugar in a sml. bowl. drizzle glaze evenly over cooled muffins
