Ingredients

6 servings
  • 2 cupfrozen corn
  • 1 tbspmargarine
  • 1/4 cuponion, chopped
  • 1tomato, diced
  • 1 tbsplime juice
  • 1 pinchsalt
  • 1 pinchblack pepper
  • 4 ozshredded Manchego cheese
  • 1 cupcooked quinoa
  • 1/4 cupcilantro, chopped

Steps

20 mins
  1. 1

    Saute onion in margarine, about 2 min.

  2. 2

    Add corn, cook 5 min

  3. 3

    Add tomato, salt, papper, quinoa...cook another 8 min

  4. 4

    Add cilantro and lime juice, stir

  5. 5

    Add cheese.

  6. 6

    As soon as cheese is melted, it is ready to serve!
