Wash and scrub beetroot until clean.

Using a large sheet of heavy duty foil, place three beetroot into one sheet and fold creating a basket to hold the beetroot. Before closing the foil up into a basket, add the pinch of salt to each and a drizzle of olive oil, for extra flavour add a bruised cloves of garlic. Close tightly

Place on a rack, in a pre-heated oven at 180 degrees C, for 45 minutes. Or until a knife can easily be inserted into a beetroot. To serve, wait until it is cooled, then chop into quarters and drizzle with more extra virgin olive oil.
