Ingredients

4 servings
  • 1 kgchicken wings
  • 2-3 tablespoons olive oil
  • 1/2 tspsalt
  • 1/2 tsppepper
  • 50 mlsweet chili sauce
  • 25 mlrice vinegar
  • 25 mlcanned coconut milk
  • 3 tbspbrown sugar
  • 3garlic cloves (pressed or finely minced)
  • 1 tbspcreamy peanut butter
  • 1 tsp-size knob of ginger, grated
  • 1lime, juiced
  • 1/2 tbspsoy sauce
  • 30 gramschopped peanuts
  • 15 gramsfreshly chopped coriandre
  • 4green onions (sliced)

Steps

    Preheat oven to 190°C

  2. 2

    Pat chicken wings completely dry then season with salt and pepper.

  3. 3

    Combine chili sauce, vinegar, coconut milk, sugar, garlic, ginger, peanut butter, soy sauce and lime juice, mixing with a fork.

  4. 4

    Heat a large oven-safe skillet over medium-high heat and add olive oil.

  5. 5

    Add chicken wings and sear, about 2-3 minutes per side.

  6. 6

    Remove wings and set on a plate, then reduce heat to medium-low.

  7. 7

    Add chili sauce mixture and bring to boil. Let simmer for 1-2 minutes, whisking constantly.

  8. 8

    Add wings back into the sauce, tossing to coat.

  9. 9

    Place skillet in the oven and bake for 25-30 minutes.

  10. 10

    Remove and spoon the sauce over top of the wings, then garnish with peanuts, cilantro and onions.
