Ingredients

  • 1 lbSkinless boneless chicken breasts, in strips
  • 1/2Red bell pepper, in strips
  • 1/2Green bell pepper, in strips
  • 15 ozRotel, tomatoes with green chiles
  • 2 tbspVegetable oil
  • 2 tspChili powder
  • 1/2 tspGarlic powder
  • 1 1/2 tspGround cumin
  • 1/4 tspSeason salt
  • 1 mediumonion, sliced
  • 1/2 tspDried oregano

Steps

  1. 1

    Preheat oven to 400°F

  2. 2

    Put chicken strips in greased 9x13 pan.

  3. 3

    Mis oil, chili powder, salt, oregano, cumin, and season salt. Drizzle over chicken and site to coat.

  4. 4

    Add peppers, onion and rotel and stir to combine.

  5. 5

    Bake for 20-25 minutes, until chicken is cooked through and veggies are tender
