Ingredients

  1. Cake mix
  2. 8 ozcream cheese
  3. 1 1/2 cupwhite sugar
  4. 3eggs
  5. 3 1/2 cupsweet rice flour
  6. 1 tbspbaking powder
  7. 1/2 cupmelted butter
  8. 1 tbspvanilla
  9. 15 ozcream of coconut (1 can)
  10. 1 cupmilk
  11. 8 ozcrushed pineapple (1 can)
  12. Topping
  13. 1/4 cupbrown sugar
  14. 2 tbspgranulated white sugar

Steps

  1. 1

    In a large bowl, cream together the cream cheese and sugar.

  2. 2

    Stir in the eggs, one at a time.

  3. 3

    Mix in the remaining ingredients and stir, until smooth.

  4. 4

    Pour into a greased 13x9 pan. Sprinkle with brown sugar and 2 tablespoons granulated sugar.

  5. 5

    Bake in a 350°F oven for 1 hour. Allow to cool. Cut into squares and serve.

  6. 6

    This is a very gooey, wet cake. It will never become dry like a regular-style cake. The top will brown and the center will stop jiggling and will spring back to the touch. That’s how you know it’s done.
