Add vegtable oil to 7 quart dutch oven over medium heat

Add onion, bell pepper, celery, salt and pepper to pot.

Cook, stir frequently until onion and celery are translucent and bell pepper soften. 6 to 8 minutes

Add garlic and cook 1 additional minute. Stirring constantly

Add pork, bay leaf, thyme, hot sauce, cayenne, water and beans to pot. Increase heat to high

Cook, stir frequently until mixture comes to a boil. (Appox 6 to 10 minutes)

Decrease heat to simmer. Cover. Cook for 1 1/2 hours stirring every 20 minutes

Uncover, increase heat slightly to maintain a steady simmer

Continue cooking 40 minutes until beans are tender and sauce is thickened to your liking.
