Sift flour and baking powder into a bowl. Add the seasonings. Mix in the milk and corn until combined.

Optional: put mixture in fridge to cool for an hour.

Place a saucepan with a bit of oil on medium/high heat and place spoonfuls of the mixture in the pan to fry on each sidr untik brown. You are aiming for crisp outsides and gooey but cooked insides. Makes about 12 fritters

Serve with chopped avocado, green pepper, mint and tomato on the side. Enjoy!
