Ingredients

  1. 2 tbspolive oil
  2. 1 1/2 cupchopped yellow union
  3. 3/4 cupchopped celery
  4. 3/4 cupchopped carrots
  5. 2 tspminced garlic
  6. 1 tspdry Italian seasoning
  7. 1/4 tspcrushed red pepper
  8. 8 cupchicken broth
  9. 9 ozcheese filled tortellini
  10. 2 tbspminced parsely
  11. 1Salt to taste
  12. 1/2 cupgrated Parmesan cheese

Steps

  1. 1

    Heat a large saucepan over high heat. Add olive oil and, when hot, add the onion , celery and carrots. Saute until soft. About 4 min

  2. 2

    Add garlic, Italian herbs, pepper, saute 2 more minutes

  3. 3

    Add chicken broth and bring to a boil. Cover, reduce the heat to medium low and simmer for 20 min

  4. 4

    Add tortellini and cook to all dente

  5. 5

    Stir in parsley, taste and adjust the seasoning.

  6. 6

    Garnish with the cheese
