  • 1sauce: added spices cumin, salt, pepper
  • 1shrimp: curry powder, cayenne pepper
  • 1 lbOaxaca cheese
  • 2 lbshrimp peeled & deviened

  1. 1

    24Guajillo chiles, stemmed&seeded
    Half onion
    6garlic.cloves boiled together at end put tomato cut an x on bottom to cook faster
    peel skin off before blending
    Simmer strainned sauce with oil & a bayleaf then, cut shrimp into bite size pieces
    Sear shrimp with melted butter, red bell pepper, onion, spinach, tomatoe & minced garlic
    heat oil to fry tortillas dip in sauce roll up with shrimp & oaxaca cheese
    Top dish with as much cheese desired and add remaining sauce heat in oven @375f for 20mins

    Served with your favourite rice & any type of bbq beans of your choice made such a great combination with both sauces it's unbelievably delicious! :D ENJOY!!!
