Ingredients

  1. 1 1/3 cupsdried chickpeas (250 grams)
  2. 2garlic cloves
  3. 1/3 cupolive oil (80 ml)
  4. 2 teaspoonsground cumin
  5. 1/2 teaspoonground coriander
  6. Juice and zest of 1 lemon
  7. 2/3 cupall-purpose flour (80 grams)
  8. Salt and pepper
  9. 1/2 bunchfresh parsley
  10. Vegetable oil for frying
  11. Tortillas for serving
  12. Coleslaw for serving
  13. Mayonnaise, yogurt for serving
  14. Or just plain cabbage salad

Steps

  1. 1

    Soak the chickpeas with a little salt for six hours.

  2. 2

    Boil them for 30 to 40 minutes.

  3. 3

    Drain the chickpeas and place them in a food processor.

  4. 4

    Add the remaining ingredients to the chickpeas.

  5. 5

    Blend in the food processor, adding more olive oil or flour as needed to get a smooth mixture.

  6. 6

    Shape the mixture into small patties and chill in the refrigerator for a short time.

  7. 7

    Fry in hot vegetable oil.

  8. 8

    Serve in tortillas with your favorite toppings.

  9. 9
