Ingredients

  1. 2 lbcherub (grape) tomatoes, sliced lengthwise in half
  2. 1 largeMaui sweet onion sliced very thinly with a mandoline if you have one
  3. 1/4 cupcider vinegar
  4. 2 tbspbrown sugar
  5. 1 1/2 tbspkosher salt
  6. 2cloves garlic minced
  7. 1 tspblack pepper, fresh ground is best
  8. 4 smallwhole dried Hawaiian chili peppers, ground (red pepper flakes can be used 1 1/2 T)
  9. 3/4 cupAvocado oil (olive oil works)
  10. 2 tbspdry parsley, I grind it between my hands to break it up
  11. 1 1/2 tspthyme or herbs de provence (prefer the HDP)

    Grind your chilies

  2. 2

    Mince your garlic.... you can use granulated garlic (3tsp) instead.

  3. 3

    Put your spices, salt, sugar, vinegar, and oil in a bowl and whisk together well. Set aside, this is your marinade.

  4. 4

    Slice your tomatoes lengthwise and place in a large bowl.

  5. 5

    Slice your onion as thinly as possible and add to the bowl with your tomatoes.

  6. 6

    Whisk your marinade well again and pour it over top of your onion/tomato mix.

  7. 7

    Very lightly toss your Aloha Cherries.

  8. 8

    Allow your amazing Aloha Cherries to marinate at least a few hours for best flavor. Overnight is even better.

  9. 9

    Your friends will love it if you serve this with some bocconcini, bite sized mozzarella balls! If you do tho remember to put them in no more than half hour before you serve. They will get slimy.
