Cooking Instructions

with a sieve generously dust a 9×13 pan that has been sprayed with Pam with a mixture of equal parts cornstarch & powdered sugar
- 2
combine tge gelatin & 1/2 cup cold water in the bowl of an electric mixer fitted with the whisk attachment & allow to sit while you make the syrup,.

meanwhile, combine the sugar, corn syrup, salt and 1/2 cup water in a small saucepan & cook until syrup reaches 240°F . remove from heat.

with the mixer on low slowly pour the sugar syrup into the dissolved gelatin. Put the mixer on high & whip until mixture is very thick, about 15 minutes.

add the peppermint extract & mix thoroughly.

I posted the homemade version but you can cheat like I did and use box brownies and frosting if you don’t have the time or just being lazy lol 😂 heat up the frosting some if you go this route it will make it easier to spread on the marshmallows. I saw something like this online and it was love at first sight! I made them subtly pink colored so that they would be spring-like, but the plain ones are nice too. You could use cocoa powder to make them brown.Work quickly once you put the mixture in the piping bags! If it's cold, it will set fast. Make the mixture on the loose side, and pipe it out when you think it's started to set a bit - this way, it won't form any peaks and the marshmallow texture will be smooth Be sure not to overdust with cornstarch.
