Chicken Broth with Angel Hair Pasta

My partner bought a whole chicken, from which I set aside two whole breasts. I used the cleaned carcasses, which still had some meat on them, along with the wings, to make this delicious broth. I didn’t want to waste those beautiful carcasses! The result was fantastic, and with the cold weather, we really appreciated it—it warmed us right up.
Its healing qualities are mentioned in the Manual de mujeres, a 16th-century anonymous Spanish book that contains many excellent recipes:
"Take a hen and kill it, then skin it, remove all the fat, and cut it into pieces. Put it in a glass still with four adarmes of nutmeg, four of cinnamon, and two adarmes each of cloves and ginger. Grind all these spices, seal the still with dough, and put it over the fire. Draw off the water until it thickens. When it thickens, remove the container. Give this water to the sick person and they will recover."

There’s not much mystery to this, but here’s how to do it: In a pot, add the chicken carcasses along with the carrots and celery. Cover with water and simmer for about 1 hour, stirring occasionally. Add salt. After an hour, strain the broth and set aside the solids.

Remove the carcasses and shred any meat from them, discarding the bones and tendons.

Add the shredded meat and carrots back to the broth. Peel and break the potatoes into irregular pieces, add them to the pot, and cook until tender. Once the potatoes are done, add the angel hair pasta and cook for just a couple of minutes until done.

When the potatoes are cooked, add the chickpeas and transfer everything to a soup tureen. Add the parsley.

Finally, serve in bowls or cups as desired.
