Kothimbir means coriander, which is the main ingredient in this recipe. Make sure you use fresh and green coriander for best results. Serve this snack with Tea or Coffee or Kokum Sherbet and revel in the flavours of Maharashtra.

Ingredients

20-25 pieces
  1. 2 cupscoriander leaves, finely chopped
  2. 1 cupbesan / gram flour / chickpea flour
  3. 1 tspginger-garlic paste
  4. 1/2 tspkashmiri red chilli powder / lal mirch powder
  5. 1/2 tspturmeric / haldi
  6. 1green chilli, finely chopped
  7. 1/2 tspcoriander powder
  8. 1/2 tspcumin powder
  9. 1 tspsesame seeds / til
  10. 1 tspmustard seeds/rai
  11. 1/4 tspgaram masala powder
  12. to tastesalt
  13. 1/4 cupwater, or as required
  14. oil to Shallow fry

Steps

  1. 1

    Firstly, in a large mixing bowl take 2 cups of chopped coriander leaves.
    also add 1 cup of besan.
    additionally add 1 tsp ginger-garlic paste, 1 green chilli, ½ tsp red chilli powder, ½ tsp turmeric, ½ tsp coriander powder, ½ tsp cumin powder, ¼ tsp garam masala powder & salt.
    combine well making sure all the spices are mixed well.

    Also squeeze and mix making sure the coriander leaves are squeezed well.
    further add water as required and begin to knead.knead to soft dough.
    shape the dough to cylindrical shape greasing hand with oil.

    Steam the dough for 15-20 minutes.
    cool the dough completely and cut them into thick slices.further,give it a tempering for that splutter white til & mustard seeds then immediately put wadi pieces into it.

    Stir occasionally till the wadi turns crisp and golden brown.finally, serve kothimbir vadi garnished with coriander leaves along with your hot cuppa.😊
