My mother has been making this for holidays and family gatherings for as long as I've been alive. It is always a favorite, and it is a great substitute for boring cornbread.

My mother has been making this for holidays and family gatherings for as long as I've been alive. It is always a favorite, and it is a great substitute for boring cornbread.

Pre-heat oven to 375°F. Grease 13x9 pan to be used.

Drain whole kernel corn and combine with cream style corn in 13x9 pan.

Add cornbread mix and sour cream to pan and stir all ingredients together.

Beat eggs thoroughly and add to pan. Mix all ingredients together.

Once casserole looks well-mixed, cut stick of butter into small (~1 tbsp) pieces and place on top of mixture apart from one another.

Bake at 375°F for 45-60 minutes.

For a fluffier and fuller casserole, double this recipe in same dish.
