  2. 500 gramschicken breasts, cubed
  3. grated cheese (any cheese that you like, I preffer gouda)
  4. 1medium onion, finely chopped
  5. 1 tsppaprika
  6. 1/3 tspturmeric
  7. salt & pepper
  8. 3 clovegarlic, crushed
  9. 2green chillies, finely chopped
  10. 1/2green bell pepper, cut into tiny cubes
  11. 1/2yellow bell pepper, cut into tiny cubes
  12. 1/2red bell pepper, cut into tiny cubes
  13. smallbunch corriander, finely chopped
  14. 2 tbspoil
  15. 2jam tomatoes, grated.

Cooking Instructions

30 mins
  1. 1

Preheat your oven at 180° C.

  2. 2

Take the 12 slices of bread and cut the crusts off. For the next step you're going to need a cupcake or muffin tray.

  3. 3

Take your bread slices and like a papercup, you're going to press them down into the tray, but not too hard or the bread might tear or get flat.

  4. 4

In a medium sized pot add your oil, garlic, chillies and onions and braise till the onions and a light golden colour.

  5. 5

Add in the chicken breasts along with paprika, turmeric, salt & pepper and give it a stir. Cover it with a lid and leave it on a medium heat for 5-10 minutes.

  6. 6

Add all but 2 tablespoons of the bell peppers to the chicken mixture. (you'll need some peppers to decorate the top of your cups)

  7. 7

Lastly, add 3/4 of the corriander & all the tomatoes then stir and leave on the heat for another 5 minutes.

  8. 8

Once the chicken mixture is cooked, remove it from the heat. Fill the cup 3/4 ways up with the chicken and top with just under a hand full of grated cheese, a bit of corriander and a few bell peppers for the colour and carry on till your mixture is finished and all your cups are full.

  9. 9

Pop them into the oven until the cheese is nice and gooey and they're all ready.
