Cooking Instructions

Preheat your oven at 180° C.

Take the 12 slices of bread and cut the crusts off. For the next step you're going to need a cupcake or muffin tray.

Take your bread slices and like a papercup, you're going to press them down into the tray, but not too hard or the bread might tear or get flat.

In a medium sized pot add your oil, garlic, chillies and onions and braise till the onions and a light golden colour.

Add in the chicken breasts along with paprika, turmeric, salt & pepper and give it a stir. Cover it with a lid and leave it on a medium heat for 5-10 minutes.

Add all but 2 tablespoons of the bell peppers to the chicken mixture. (you'll need some peppers to decorate the top of your cups)

Lastly, add 3/4 of the corriander & all the tomatoes then stir and leave on the heat for another 5 minutes.

Once the chicken mixture is cooked, remove it from the heat. Fill the cup 3/4 ways up with the chicken and top with just under a hand full of grated cheese, a bit of corriander and a few bell peppers for the colour and carry on till your mixture is finished and all your cups are full.

Pop them into the oven until the cheese is nice and gooey and they're all ready.
