Ingredients

3Eggs
2 cupZucchini, finely grated
1 tspSalt
1/2 tspBaking powder
1 cupOil
1 tbspVanilla
1 tspBaking soda
1/2 cupNuts, chopped (optional)
1 1/2 cupSugar
3 cupFlour
1 tbspCinnamon

Beat eggs, add oil & sugar and mix well.

Add zucchini and vanilla - mix.

Sift together flour, salt, baking soda, cinnamon and baking powder. Add dry ingredients to egg/zucchini mixture.

Add nuts, if desired.

Bake in (2) greased bread pans at 325°F for 60-75 minutes until done.
