For some good homemade jerky if you don't happen to have a dehydrator.
Steps

Carve meet into desired strip size.

Prepare marinade/rub
- 3
Marinate overnight.
- 4
Run skewers through the ends of the strips.

Place oven rack at its highest place.
- 6
Place skewers/strips on the rack so the strips dangle down freely without touching each other.

Set oven to lowest possible temperature. ~125°
- 8
Crack oven door with cloth.

Dry for 6-8 hours.
- 10
Take out. Cool down. Bag up. Enjoy!
