(start the broth)

Put water,chicken breast,onion in a large stock pot and boil for one hour over high heat

(While it boils, make the noodle dough)

Combine flour, starch, one teaspoon of salt, two table spoons of vegetable oil, 1 1/4 of water in a large ball

Mix it with a wooden spoon to form a lump.knead by hand until it forms a ball. Put it in to a plastic bag. Seal it and let it sit in the fridge for 15 minutes

Then again take it and knead it for about 2-5 minutes

Dust a large cuttin board and put the dough on it. Roll it out with a rolling pin to a circle of 18 inches and 1/16 inch thickness

Evenly spread some flour on the dough and fold it over 3 or 4 times. Cut it into thin noodles about 1/8 inch thickness

Seperate them carefully. Then add the noodles to the chicken broth and stir it with a wooden spoon

After about 15 minutes pour the brothe and noodles to a individual bowl

Sprinkle the chicken over the broth noodle. If you want it to be spicy add chillie paste
