Ingredients

  1. 2acorn squash (2.5 lb/5.7 kg total)
  2. 1/4 cupolive oil (60 mL)
  3. 1/2 tspsalt (2mL)
  4. 1/2 tsppepper (2mL)
  5. 1 tbspchopped fresh sage, or1/2 tsp dried) (15 mL)
  6. 1 tbspbalsamic vinegar (15 mL)
  7. 1 tspDijon mustard (5 mL)

Cooking Instructions

    Cut squash in half lengthwise; scoop out seeds. Cut halves crosswise into 1/4" slices. Place in large bowl. Add half each of the olive oil, salt, and pepper and toss to coat.

    Place squash on grill over medium-high heat and close lid. Grill, turning once, until tender and brown (about 10 minutes). Remove.

    Mix remaining ingredients in a small bowl and drizzle over cooked squash.
