Necessity being the mother of invention, this recipe came about when my cheesecake didn't set in time. This became a huge hit so I've decided to share the love.

Necessity being the mother of invention, this recipe came about when my cheesecake didn't set in time. This became a huge hit so I've decided to share the love.

Ingredients

  1. 250 gramsphillidelphia cream cheese
  2. 400 mlcondensed milk
  3. 2 tbsplemon rind
  4. 1/3 cupfresh lemon juice
  5. 250 gramsgranita biscuits
  6. 125 gramsbutter
  7. 600 mlthickened cream

Cooking Instructions

    At room temp blend the cheese til creamy

    Add condensed milk, lemon juice and rind. Blend till smooth, refrigerate.

    Crush the biscuits and melt the butter combine til well mixed.

    Grease a round oven tray and line with baking paper.

  5. 5

    Pour biscuit mixture onto tray and using a flat bottomed glass press the mixture evenly around the tray. Refrigerate.

    Having refrigerated ingredients for 1 to 4hrs start layering your shot glasses with cheescake filling and cream.

    Next chop the biscuit slab into shards for decorating...Enjoy!
