Today we're making a healthy English breakfast that's become popular here in recent years, with oats as the main ingredient. This recipe gives a flavor similar to rice pudding by infusing the milk with lemon peel and cinnamon. I used oat milk, but you can use soy, almond, regular milk, or whichever you prefer. In a saucepan, heat the lemon peel with the cinnamon stick in the oat milk.

Before it comes to a boil, add the rolled oats and vanilla extract. Stir and cook for about 5 minutes. When it starts to thicken, add the brown sugar. I use just one teaspoon, but you can add more to taste.

Stir and cook for 2 more minutes. Adjust the cooking time if you prefer a thicker porridge, but keep in mind that it will thicken more as it sits. If you’re not eating it right away, the oats will continue to absorb liquid.

Remove from heat and let cool. You can enjoy it warm, or cover with plastic wrap and refrigerate to eat the next day.

Serve with raisins, chopped almonds, ground cinnamon, and your favorite fruit. Enjoy!
