Ingredients

  1. 1 1/2 cupsoat milk (about 360 ml)
  2. 4 tablespoonsrolled oats
  3. Peel of 1 lemon
  4. 1cinnamon stick
  5. A fewdrops of vanilla extract (optional)
  6. 1 teaspoonbrown sugar or panela
  7. Raisins and ground cinnamon for serving
  8. Chopped fruit and almonds

Steps

  1. 1

    In a saucepan, heat the lemon peel with the cinnamon stick in the oat milk.

  2. 2

    Before it comes to a boil, add the rolled oats and vanilla extract. Stir and cook for about 5 minutes. When it starts to thicken, add the brown sugar. I use just one teaspoon, but you can add more to taste.

  3. 3

    Stir and cook for 2 more minutes. Adjust the cooking time if you prefer a thicker porridge, but keep in mind that it will thicken more as it sits. If you’re not eating it right away, the oats will continue to absorb liquid.

  4. 4

    Remove from heat and let cool. You can enjoy it warm, or cover with plastic wrap and refrigerate to eat the next day.

  5. 5

    Serve with raisins, chopped almonds, ground cinnamon, and your favorite fruit. Enjoy!
