Crock Pot Chicken and Sausage Gumbo

Ingredients

4 servings
  1. 1/3 cupall-purpose flour
  2. 1/3 cupoil
  3. 3 cupwater
  4. 12 ozcooked sausage links, sliced
  5. 1/2 cupdiced cooked chicken (from my weekly roast chicken)
  6. 2 cupsliced okra or 10-ounce package frozen okra
  7. 1 cuponion, diced (about 1 large)
  8. 1/2 cupgreen pepper, diced
  9. 1/2 cupcelery, diced
  10. 4 clovegarlic, minced
  11. 1/2 tspsalt
  12. 1/2 tspground black pepper
  13. 1/4 tspground red pepper
  14. 3 cuphot cooked rice

Cooking Instructions

  1. 1

    To make the roux, stir together oil and flour in a medium saucepan until smooth.

    Cook over medium-high heat for about 5 minutes, stirring constantly.

  3. 3

    Reduce heat to medium; cook and stir constantly about 15 minutes more until it’s a dark, reddish-brown color. Cool.

    Place water in a Crock Pot and add roux; stir.

  5. 5

    Add sausage, chicken, okra, onion, pepper, celery, garlic, salt, black pepper, and red pepper.

  6. 6

    Cover and cook on low heat for 6-7 hours, or on high heat for 3 hours.

  7. 7

    Skim off the fat, and serve over rice.
