I love gumbo and this one sure doesnt dissapoint. It has just the right level of consistant heat and is full of flavor. I used orange and red bell peppers, they're sweet and have a lot of flavor to them.

Ingredients

  1. 1/3 cupoil for frying
  2. 1/3 cupall purpose flour
  3. 2 eachonion chopped
  4. 2 eachBell Pepper chopped
  5. 4 cloveminced garlic
  6. 3 eachlarge boneless skinless chicken breast cut into small chunks
  7. 1 lbsmoked sausaged sliced
  8. 2 can(14.5 oz) diced tomatoes with chilis (not drained)
  9. 1/2 lbham cubed
  10. 8 ozfresh sliced mushrooms
  11. 3 tbspdried parsley
  12. 1 1/4 tbspWorcestershire Sauce
  13. 1 1/2 tspsoy sauce
  14. 1 1/2 tspwhite sugar
  15. 3/4 tspsalt
  16. 3/4 tspblack pepper
  17. 5 dashhot sauce
  18. 2 cupchicken stock
  19. 1 cupsherry

Steps

  1. 1

    Heat oil in a large dutch oven over high heat. Stir in flour and cook. Stir constantly for 5 minutes or until the mixture turns a light shade of brown.

  2. 2

    Reduce heat to low and stir in onion, bell pepper, and garlic. Cook 10-15 mins until tender stirring occasionally.

  3. 3

    Add sherry and stir. Cook for 2 more minutes stirring occasionally.

  4. 4

    Add chicken, smoked sausage, ham, tomatoes with green chilis, mushrooms, parsley, worcestershire sauce, soy sauce, sugar, salt, pepper, hot sauce, and chicken stock. Combine everything together cover. Raise heat to medium and simmer for 20 mins stirring occasionally.

  5. 5

    If you find that the consistancy is too soupy sprinkle flour in a little at a time and stir to thicken.

  6. 6

    Serve over rice with a side or cornbread and enjoy!
