Ingredients

  1. 2Acorn or butternut squash
  2. 1/2 lbMushrooms,chopped
  3. 1 cupOnion, chopped
  4. 1 cloveCrushed garlic
  5. 1 cupLow fat cottage cheese
  6. 1/2 tspBasil
  7. 1/4 cupChopped parsley
  8. Salt & Pepper
  9. 3/4 cupCooked brown rice or bread crumbs
  10. 2 tbspDry white wine.

Steps

  1. 1

    Split the squash lengthwise and remove seeds. Bake facing down in a baking dish for 30 minutes at 350°F. Or until tender.

  2. 2

    While the squash are baking sautéed mushrooms, onions, salt, and pepper until onions are soft.

  3. 3

    Drain, but keep liquid. Combine with remaining ingredients.

  4. 4

    Fill squash halves with stuffing and bake uncovered for 25 to 30 minutes at 350°F.

  5. 5

    Baste squash with sauté juice during baking.
