These are amazing with apple butter! The recipe calls for self rising flour. If you don't have that then you add 2 1/2 teaspoons of baking powder and 1/2 teaspoon of salt.

Cooking Instructions

Combine first four ingredients in a bowl.

Cut in 1/4 cup butter and coconut oil with a pastry blender or fork until mixture is crumbly.

Add mashed sweet potatoes and milk, stirring just until dry ingredients are moistened.

Turn dough out in to a floured surface and knead just a few times.

Roll dough out to 1/2 inch thickness; cut with a 2 inch biscuit cutter.

Place biscuits on an ungreased baking sheet and brush with melted butter.

Bake at 400° for twelve minutes or until nicely browned.

I like both scones and sweet potatoes, so I made this. Adding in cinnamon sugar changes the flavor and gives you another taste to enjoy. I got this idea from Cookie Shias' "Sweet Potato Milk Boil American" ID: 1377062.Please add more soy milk in Step 4 until it forms into one lump. When freezing the dough, cut it after letting it sit once in the fridge and store it to make it convenient to use. Please let sit for about 10 minutes to return it to room temperature and then bake. I was given loads of sweet potatoes, so I adapted a cookie recipe to incorporate them.Baking time may vary on your oven so adjust accordingly.
