I slightly overcooked my vegetables here but it still came out tasting nice. It had a slight spicy mushroom flavour.
Steps

First soak the dried mushrooms in the boiling water along with the chicken stock cube for 30 minutes.

Drain the mushrooms but reserve the liquid to be used.

Heat the oil in a wok on a medium heat.

Add the onion and bay leaf when heated and fry for 2 minutes or until softened.

Add the garlic along with 4 tablespoon of the mushroom liquid and fry for a further 1-2 minutes.

Add the mushrooms and cook for 1 minute.

Next add the corn and peas and fry for 2 minutes. Add 4 tablespoons of the mushroom liquid.

Reduce liquid by cooking for a few minutes then add the prawns, pepper and stalks. Fry for 1 minute, then add 1 tablespoon of the liquid.

Add the salt and chilli.

Cook for a further 2-3 minutes.

Add the tat soi leaves and along with 1 tablespoon of liquid and fry for 1-2 minutes.

Check seasoning and serve.
