Ingredients

4 servings
  1. 1red pepper (sliced)
  2. 4baby sweetcorn (cut in half)
  3. 2tat soi (leaves whole and stalks chopped)
  4. 1onion (sliced)
  5. 2garlic cloves (roughly chopped)
  6. 50 gramssnow peas
  7. 1/2 tspgarlic salt
  8. 1chicken stock cube
  9. 1 handfuldried wild mushrooms
  10. 100 mlboiling water
  11. 1/4 tspCayenne chilli pepper
  12. 50 gramsfrozen prawns.
  13. 2 tbspground nut oil

    First soak the dried mushrooms in the boiling water along with the chicken stock cube for 30 minutes.

    Drain the mushrooms but reserve the liquid to be used.

    Heat the oil in a wok on a medium heat.

  4. 4

    Add the onion and bay leaf when heated and fry for 2 minutes or until softened.

    Add the garlic along with 4 tablespoon of the mushroom liquid and fry for a further 1-2 minutes.

    Add the mushrooms and cook for 1 minute.

    Next add the corn and peas and fry for 2 minutes. Add 4 tablespoons of the mushroom liquid.

    Reduce liquid by cooking for a few minutes then add the prawns, pepper and stalks. Fry for 1 minute, then add 1 tablespoon of the liquid.

    Add the salt and chilli.

    Cook for a further 2-3 minutes.

    Add the tat soi leaves and along with 1 tablespoon of liquid and fry for 1-2 minutes.

    Check seasoning and serve.
